Blanc de Blanc Brut
This methode champenoise sparkler is made from a Vidal Blanc cuvée pressed from whole-berry Vidal Blanc grapes. The primary fermentation was effectuated with a Champagne strain of Prise de Mousse yeast, with a subsequent malolactic fermentation to add complexity and softness. Finished with a Brut dosage at about 1% residual sugar, this sparkler has a very pleasant, dry character.
